Michael’s Foolproof Crockpot Chicken

I can’t even begin to tell you how many different chicken recipes I have in various cook books all over the house.  What I can tell you without a doubt is that this is by far the easiest chicken recipe I have ever seen.  You won’t believe how easy it really is until you try it for yourself but I promise you it works just as simply as I represent here – even if you have absolutely no experience cooking at all you can do this right.

WHAT YOU NEED:

  • whole chicken (fryer or roaster, whatever is cheapest)
  • olive oil
  • 1 apple
  • 1 sweet yellow onion
  • minced garlic
  • salt & pepper
  • herbs (optional)

WHAT YOU DO:

1.  Start by rinsing the chicken very well both inside and out.  If there is a giblet packet inside, remove it and discard.  Allow all water to drain out and pat the outside dry with paper towels.

2.  Cut apple and onion into quarters and stuff inside the chicken cavity and carefully place chicken breast side down in the crock pot.

3.  Drizzle olive oil atop the chicken and rub it lightly to evenly coat the skin.  Sprinkle with salt, pepper and garlic and add any fresh herbs you have on hand.  I use rosemary, sage and parsley.

4.  Cover and set crock pot to low heat.  Cook on low for 6-8 hours.

The first response I usually get when I have given this recipe to someone is that the chicken will be dry.  It isn’t dry at all!  This is the most moist chicken you have ever had, trust me.  Do not add any liquid to this recipe, you really don’t need it.

As an added bonus, the chicken will render the most rich and flavorful stock you’ve ever had!  Pour it off, let it cool and freeze it!
